dc.description.abstract	Η συγκεκριμένη εργασία αφορά την βιβλιογραφική μελέτη της εφαρμογής του συστήματος Kosher σε βιομηχανία κρέατος. Η εβραϊκή κοινότητα ανά τον κόσμο αριθμεί περισσότερα από 15 εκατομμύρια άτομα, όπου το μεγαλύτερο μέρος τους, εκτός Ισραήλ βρίσκεται στις Η.Π.Α.. Σύμφωνα με την εβραϊκή βίβλο (Torah), που είναι η βάση των αξιών των Εβραίων και καθoρίζει τον τρόπο της καθημερινής ζωής, την συμπεριφορά, καθώς επίσης και τον τρόπο διατροφής τους (Kosher). Επομένως για την διασφάλιση της καλής ποιότητας και της υγιεινής των τροφίμων, μια βιομηχανία τροφίμων πρέπει να συμμορφώνεται με τις προδιαγραφές του εβραϊκού διατροφικού κανονισμού(Kashrut), για να μπορέσει να υλοποιήσει και να διατηρήσει την παραγωγή των προϊόντων Kosher. Το σύστημα Kosher είναι μια θρησκευτική πιστοποίηση που έχει ως βασικό στόχο, να ελέγχει όλα τα στάδια της παραγωγής, από τις πρώτες ύλες ως το τελικό προϊόν, να ορίζει τους τρόπους με τους οποίους θα μεταχειρίζεται το ζώο πριν από την σφαγή, κατά την σφαγή (Shechita) και τις διαδικασίες μετά την σφαγή (Koshering). Παράλληλα ορίζει και προδιαγραφές που οφείλει να πληροί μια βιομηχανία στις εγκαταστάσεις της. Τέλος, αποτέλεσμα όλων αυτών των προδιαγραφών που ορίζονται μέσω του νόμου Kosher, είναι να παράγεται ένα υψηλό ποιοτικό προϊόν που καταναλώνεται από Εβραίους πολίτες, αλλά και από εκατοντάδες άλλους απλούς καταναλωτές ανά τον κόσμο.	el

dc.description.abstracttranslated	This thesis deals with the bibliographic study of the application of the kosher system in the production of a meat industry. The Jewish community worldwide numbers more than 15 million people most of them outside of the Israel, live in the United States. According to the Hebrew book (Torah), which is the base of the values of the Jewish people, indicate the daily life, their behavior as well as, the way of eating (kosher). Therefore, to ensure the good quality and the hygiene of the food, a food industry must comply with the standards of the Jewish food regulation (Kashrut), in order to be able to implement and maintain the production of Kosher products. The Kosher system is a religious certification which’s main role is to control all stages of production, from raw materials to the final product, and to define the ways in which the animal shall be treated, before slaughter, during slaughter (Shechita) and post-slaughter processes (Koshering). At the same time, it sets standards that an industry must meet in its facilities. Finally, the result of all these specifications set out by the Kosher law, is the production of a high-quality product that is consumed by Jewish citizens as well as by hundreds of other consumers around the world, who choose to eat kosher certified products.	el
